Catching Up

I’ve been terrible about updating my blog lately, and sincerely apologize! Honestly, there hasn’t been all that much going on outside of working, eating, sleeping, and other such routine activities.

But, there have been some highlights scattered throughout the last couple of weeks! Here are a few:

  • I tried some great new recipes (both from Real Simple).

First up: Bean and Chicken Sausage Stew

This proved to be a delicious and filling lunch for Kevin and me last week. It’s quick, and easy to prep in advance, too. I’ll be making this again (especially as the weather cools).

Next: Salmon with Baby Bok Choy and Apple Slaw

One of my favorite things about Real Simple recipes is the way they truly take simplicity to heart. Not only are their recipes easy and quick to prepare, but they also include just a handful of ingredients, so I don’t feel like I have to buy half the grocery store just to try a new recipe. This salmon dish was straightforward and really good.

  • Kevin, Fulton, and I enjoyed a weekend at the beach.

We are so fortunate to be able to use my in-laws’ condo at Oak Island for both leisurely vacation time as well as quick weekend trips to the beach. Last weekend was definitely a short trip, but a great one for sure. Perhaps it was because it came at the end of a very long week, or maybe it was because we lucked out with weather. Regardless, it was one of our best beach trips yet. (And Fulton had a wonderful time, too. He even got a “swimming lesson” in the ocean both days. We’re determined to make this guy a water dog after all!)

  • We got new couches!

This is hugely exciting. We’d had a pretty blah couch since moving to Winston a couple of years ago, and were pretty thrilled about this upgrade. The couches were a combined anniversary gift, Kevin’s birthday gift, and my birthday gift to each other. Completely worth it — we love them!

This weekend, we’re heading north to Chicago to celebrate my friend Mike’s wedding and hang out with some of my very favorite people — the folks that were in Malaysia with me back in 2008. Can’t wait to see everyone!
