I loved getting to chat with Ilene Moreno of the blog The Colorful Kitchen recently, and know you’ll enjoy hearing her talk about why she switched to a plant-based diet many years ago, where her recipe inspiration comes from, and how she involves her young daughters in meal prep to help them be excited to eat colorfully. Ilene has a new cookbook coming out in December — her second! — and I’ve been lucky enough be part of a group that got early access to many of the recipes. They’re SO GOOD! (She posted this perfect-for-fall sneak peek recipe to her blog. Be sure to give it a try!) We talked about the motivation behind this cookbook (the angle is family-friendly recipes, which is amazing) and how it came together.
