Sunshine Cocktails

If you’ve been reading this blog for a while, you might recall me mentioning Sunshine before, both as a refreshing standalone pick-me-up drink and as an ingredient for ginger cupcakes. You might have even encountered Sunshine out in the wild, which I’m hoping is the case. The drink is now available at upwards of 400 retailers, most of whom are in the Southeast.

As a full-disclosure measure, I want to make sure to mention that I work for the ad agency that’s behind the making and marketing of Sunshine, so this is a product that’s near and dear to my heart. The good news is it’s also a really, really great drink (and one I grew to love before coming to work at The Variable), so I’m always excited to spread the word about it.

Today I want to share the gloriousness that is Sunshine as a cocktail mixer. Yup. This ginger berry-flavored fizzy burst of good energy is, as it turns out, delightful when combined with liquor. (Did your Thursday just get a bit better? I hope so!)

Oh, and if you’ve never bought Sunshine before, here’s the spot to search for retailers that sell the drink. If there aren’t any retailers close by, you can always order a case of 24 from Amazon (that way your fridge and/or bar will be well stocked!). Shipping is free if you’re an Amazon Prime member. Score!

There are lots of delicious Sunshine cocktail recipes specially designed with the drink in mind (some are available here on the website and others are being posted to Sunshine’s social channels, so be sure to follow them on Instagram and/or like them on Facebook if you don’t already), and I’ve included some of my faves below:

Early Riser:

  • 2 1/2 ounces bourbon
  • 1 ounce simple syrup
  • 10 mint sprigs
  • 2 large peach slices
  • fill with Sunshine
  • garnish with mint sprig and confectioner’s sugar

Sunshine City:

  • 1 1/2 ounce vodka
  • 3/4 ounces triple sec
  • 1 ounce pomegranate juice
  • 2 ounces Sunshine
  • garnish with a lime wheel

Sunny and Share (makes drinks for two, so grab a friend!):

  • 8 ounces spiced rum
  • 1 ounce lime juice
  • 1 ounce simple syrup
  • 1 ounce pineapple juice
  • 1 ounce passion fruit or puree
  • 1 can of Sunshine
  • garnish with cinnamon sticks, orange rounds, and lime rounds
